A creamy, flavorful soup with Cajun and ranch seasonings, perfect for a hearty meal.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tbsp Cajun seasoning
  • 1 tbsp ranch seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chicken and cook until browned. Remove and set aside.
  3. Sauté onion, garlic, and bell pepper until soft.
  4. Stir in Cajun and ranch seasoning.
  5. Pour in chicken broth and bring to a simmer.
  6. Shred the cooked chicken and return to the pot.
  7. Stir in heavy cream and cheddar cheese until melted.
  8. Season with salt and pepper. Serve hot.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or milk.
  • Adjust Cajun seasoning for more or less heat.
  • Top with chopped green onions or parsley for freshness.
