  • 2 boneless, skinless chicken breasts
  • 1 cup fresh or frozen corn
  • 1 diced bell pepper
  • 1 diced onion
  • 3 minced garlic cloves
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chicken and cook until browned (5 minutes per side).
  3. Remove chicken and set aside.
  4. In the same pot, sauté onion, bell pepper, and garlic until soft (3 minutes).
  5. Add corn and Cajun seasoning, stir for 1 minute.
  6. Pour in chicken broth and bring to a boil.
  7. Shred the cooked chicken and return to the pot.
  8. Reduce heat and simmer for 15 minutes.
  9. Stir in heavy cream and cook for 5 more minutes.
  10. Season with salt and pepper before serving.

  • For a lighter version, replace heavy cream with coconut milk.
  • Add diced celery or carrots for extra vegetables.
  • Adjust Cajun seasoning to your preferred spice level.
