  • 2 boneless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 celery stalk, chopped
  • 1 carrot, sliced
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in onion, garlic, bell pepper, celery, and carrot. Cook for 5 minutes.
  4. Add Cajun seasoning, paprika, and cayenne pepper. Mix well.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Stir in heavy cream and simmer for another 5 minutes.
  8. Season with salt and pepper.
  9. Serve hot.

  • For a keto version, replace heavy cream with coconut cream.
  • For a low-calorie option, use low-fat milk instead of heavy cream.
