- 2 cups dried white beans, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 carrot, diced
- 1 celery stalk, diced
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup diced turkey bacon
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened.
- Add turkey bacon and cook for 3 minutes.
- Drain soaked beans and add them to the pot.
- Pour in vegetable broth and add bay leaf and thyme.
- Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
- Remove bay leaf and blend half the soup for a creamy texture.
- Season with salt and pepper.
- Serve hot.
