  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • 1 tsp salt

  • 1 tsp smoked paprika
  • 2 strips turkey bacon, chopped (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add turkey bacon if using, cook for 2 minutes.
  4. Add soaked beans and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Stir in coconut milk, salt, pepper, and smoked paprika.
  7. Blend half the soup for a creamy texture.
  8. Serve hot.
