- 2 Cornish hens (about 1.5 lbs each)
- 1 cup fresh cranberries
- 1/2 cup orange juice
- 1/4 cup honey
- 1 tbsp Dijon mustard
- 1 tsp grated orange zest
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Pat the hens dry and rub with olive oil, salt, pepper, and thyme.
- Place hens on a roasting rack in a baking dish.
- In a saucepan, combine cranberries, orange juice, honey, mustard, and orange zest. Simmer for 10 minutes until thickened.
- Brush half the glaze over the hens.
- Roast for 40 minutes, basting with remaining glaze halfway through.
- Let rest for 10 minutes before serving.
Notes
- Use fresh cranberries for the best flavor.
- Adjust honey to taste if cranberries are too tart.
- Check internal temperature—should reach 165°F (74°C).
