Ingredients

  • 2 Cornish hens (about 1.5 lbs each)
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1 tbsp Dijon mustard
  • 1 tsp grated orange zest
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the hens dry and rub with olive oil, salt, pepper, and thyme.
  3. Place hens on a roasting rack in a baking dish.
  4. In a saucepan, combine cranberries, orange juice, honey, mustard, and orange zest. Simmer for 10 minutes until thickened.
  5. Brush half the glaze over the hens.
  6. Roast for 40 minutes, basting with remaining glaze halfway through.
  7. Let rest for 10 minutes before serving.
