  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 slices turkey bacon, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until softened.
  3. Stir in turkey bacon and cook for 2-3 minutes.
  4. Add vegetable broth, white beans, thyme, rosemary, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove bay leaf and season with salt and pepper.
  7. Serve hot.
