Ingredients

  • 2 chicken breasts, boneless and skinless
  • 8 cups low-sodium chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until softened.
  2. Add garlic, thyme, and parsley. Cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Add chicken breasts, reduce heat, and simmer for 15-20 minutes until chicken is cooked through.
  4. Remove chicken, shred it, and return to the pot.
  5. Add egg noodles and cook for 7-10 minutes until tender.
  6. Season with salt and pepper. Serve hot.

Notes

  • For a keto version, replace noodles with zucchini noodles.
  • Use gluten-free noodles if needed.
