  • 2 lbs boneless chicken breasts
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced potatoes
  • 1 cup corn kernels
  • 1 cup diced onions
  • 2 cloves minced garlic
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup heavy cream
  • 2 tbsp butter

Instructions

  1. Place chicken, broth, carrots, celery, potatoes, corn, onions, garlic, thyme, pepper, and salt in the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Remove chicken, shred it, and return to the pot.
  4. Stir in heavy cream and butter.
  5. Cook for another 30 minutes.
  6. Serve hot.
