- 2 lbs boneless chicken breasts
- 4 cups chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced potatoes
- 1 cup corn kernels
- 1 cup diced onions
- 2 cloves minced garlic
- 1 tsp thyme
- 1 tsp black pepper
- 1 tsp salt
- 1 cup heavy cream
- 2 tbsp butter
- Place chicken, broth, carrots, celery, potatoes, corn, onions, garlic, thyme, pepper, and salt in the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Remove chicken, shred it, and return to the pot.
- Stir in heavy cream and butter.
- Cook for another 30 minutes.
- Serve hot.
