1 lb boneless, skinless chicken breasts
6 cups low-sodium chicken broth
1 cup white rice, uncooked
1 medium onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 garlic cloves, minced
1 tsp dried thyme
1 tsp dried parsley
1 bay leaf
Salt and pepper to taste
1 tbsp olive oil
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Sauté for 5 minutes until softened.
Stir in garlic, thyme, and parsley. Cook for 1 minute.
Pour in chicken broth and add the bay leaf. Bring to a boil.
Add chicken breasts and reduce heat to a simmer. Cook for 20 minutes or until chicken is fully cooked.
Remove chicken, shred it, and return to the pot.
Add rice and simmer for 15 minutes until tender.
Discard the bay leaf and season with salt and pepper.
Serve hot and enjoy.
Notes
For a low-carb version, replace rice with cauliflower rice.
