Ingredients

  • 1 cup dried white beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 4 slices turkey bacon, chopped (optional)

Instructions

  1. Drain and rinse the soaked beans.
  2. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  3. Add turkey bacon (if using) and cook for another 3 minutes.
  4. Add beans, vegetable broth, thyme, and rosemary. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour or until beans are tender.
  6. Season with salt and pepper. Serve hot.

Notes

  • For a thicker soup, blend half of it before serving.
  • Soaking beans overnight reduces cooking time.
  • Freeze leftovers for up to 3 months.
