Ingredients

16 large raw shrimp (peeled, cleaned, and thawed)

1 tsp coconut oil

¼ cup shredded coconut

2 cloves garlic, smashed and minced

½ TBSP dried parsley

½ tsp garlic powder

¼ tsp cayenne pepper

⅛ tsp salt

Red pepper flakes, to taste

6 oz dry fettuccine noodles

½ cup freshly grated Romano or Parmesan cheese

1 cup unsweetened coconut milk

12 TBSP goat cheese

1 tsp lemon juice

½ tsp dried parsley

½ tsp garlic powder

¼ tsp salt

Black pepper and additional salt to taste


Instructions

1. Cook the noodles according to the package directions. Undercook by 1–2 minutes for sauce simmering.

2. While noodles cook, heat skillet over medium-high and add shrimp.

3. After a minute, add coconut oil, garlic powder, salt, parsley, cayenne, and garlic. Stir to coat shrimp.

4. Add shredded coconut and flip shrimp until pink and opaque.

5. Optional: add red pepper flakes for heat.

6. Remove shrimp from heat once cooked. Drain pasta and return to pot on medium-low heat.

7. Add coconut milk, cheeses, lemon juice, herbs, and seasonings to the pot with noodles.

8. Stir constantly for 5–10 minutes until the sauce thickens.

9. Fold in half the shrimp, taste and adjust seasonings as needed.

10. Top with remaining shrimp and coconut. Serve hot with salad or veggies.

Notes

Use goat cheese for a tangy twist, or substitute with cream cheese if preferred.

Don’t rush the sauce—it thickens in the last few minutes.

Serve with lemon wedges for brightness.
