- 1/4 cup granulated sugar
- 1/2 cup melted butter
- Filling: 900 g cream cheese (room temperature)
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/4 cup heavy cream
- Preheat oven to 160°C.
- Mix graham cracker crumbs, sugar, and melted butter.
- Press firmly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and set aside to cool.
- In a large bowl, beat cream cheese until smooth.
- Add sugar and vanilla and mix until combined.
- Add eggs one at a time, mixing after each addition.
- Mix in sour cream and heavy cream until smooth.
- Pour filling over crust.
- Bake for 50–60 minutes until center is slightly jiggly.
- Turn off oven and leave door slightly open for 1 hour.
- Remove and cool completely.
- Refrigerate for at least 4 hours or overnight before slicing and serving.
