  • 1 can (400 g) black-eyed peas, drained
  • 1 1/2 cups corn kernels
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, chopped
  • 2 tomatoes, diced
  • 1/4 cup cilantro, chopped
  • For the dressing:
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, bell peppers, onion, tomatoes, and cilantro.
  2. In a separate bowl, whisk olive oil, lime juice, red wine vinegar, sugar, salt, and pepper until well combined.
  3. Pour the dressing over the bean mixture and toss thoroughly.
  4. Refrigerate for at least 1 hour before serving to enhance flavor.

Notes

  • For a keto version, omit corn and sugar.
