- 20 large white mushrooms: cleaned and stems removed
- 2 cups fresh spinach: chopped
- 1/2 cup feta cheese: crumbled
- 2 cloves garlic: minced
- 2 tbsp olive oil
- 1/4 tsp black pepper
- 1/4 tsp salt
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
- Add spinach and cook until wilted, about 3 minutes. Remove from heat.
- Mix the spinach with feta cheese, salt, and pepper in a bowl.
- Stuff each mushroom cap with the spinach and feta mixture.
- Place stuffed mushrooms on a baking sheet and bake for 15 minutes, or until tender.
- Serve warm.
Notes
- Use large mushrooms for easier stuffing.
- You can substitute feta with goat cheese if preferred.
- Store leftovers in an airtight container in the fridge for up to 2 days.
