- 6 large eggs, hard boiled
- 1 ripe avocado, mashed
- 2 tbsp Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 tbsp fresh dill, finely chopped
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- Paprika or extra herbs for garnish
Instructions
- Cut the hard boiled eggs in half lengthwise. Remove yolks and place them in a bowl.
- Mash the yolks with a fork. Add avocado, Greek yogurt, lemon juice, herbs, garlic powder, salt, and pepper. Mix until smooth.
- Spoon or pipe the filling back into the egg whites.
- Sprinkle with paprika or extra herbs for garnish.
- Chill for 15 minutes before serving.
Notes
- Use fresh herbs for the best flavor.
- If the filling is too thick, add a little more yogurt or lemon juice.
- Store leftovers in an airtight container in the fridge for up to 2 days.
