Ingredients

  • 6 large eggs, hard boiled
  • 1 ripe avocado, mashed
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp fresh dill, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Paprika or extra herbs for garnish

Instructions

  1. Cut the hard boiled eggs in half lengthwise. Remove yolks and place them in a bowl.
  2. Mash the yolks with a fork. Add avocado, Greek yogurt, lemon juice, herbs, garlic powder, salt, and pepper. Mix until smooth.
  3. Spoon or pipe the filling back into the egg whites.
  4. Sprinkle with paprika or extra herbs for garnish.
  5. Chill for 15 minutes before serving.

  • If the filling is too thick, add a little more yogurt or lemon juice.
