- 1 1/2 cups gingerbread cookie crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
Instructions
- Preheat oven to 325°F (165°C). Line an 8×8-inch pan with parchment paper.
- Mix gingerbread crumbs and melted butter. Press into the pan to form the crust.
- Bake crust for 10 minutes. Let cool slightly.
- Beat cream cheese and sugar until smooth. Add vanilla and eggs, one at a time.
- Mix in sour cream and spices until fully combined.
- Pour filling over the crust and smooth the top.
- Bake for 35-40 minutes until set. Cool completely before slicing.
