  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves

Instructions

  1. Preheat oven to 325°F (165°C). Line an 8×8-inch pan with parchment paper.
  2. Mix gingerbread crumbs and melted butter. Press into the pan to form the crust.
  3. Bake crust for 10 minutes. Let cool slightly.
  4. Beat cream cheese and sugar until smooth. Add vanilla and eggs, one at a time.
  5. Mix in sour cream and spices until fully combined.
  6. Pour filling over the crust and smooth the top.
