Description

Delicious Christmas eggnog cheesecake cupcakes that are alcohol-free and perfect for the holiday season.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup eggnog
  • 1 tsp vanilla extract
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (165°C). Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of each liner.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
  4. Stir in eggnog, vanilla, nutmeg, and cinnamon until combined.
  5. Pour batter over crusts, filling each liner 3/4 full.
  6. Bake for 20-25 minutes or until set. Let cool before refrigerating for at least 2 hours.
