1 large cucumber: sliced into rounds
8 oz cream cheese: softened
1 tbsp fresh dill: finely chopped
1 tbsp fresh chives: finely chopped
1 tsp lemon juice
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/4 cup pomegranate seeds: for garnish
1/4 cup fresh parsley: finely chopped for garnish
Instructions
In a bowl, mix the softened cream cheese, dill, chives, lemon juice, garlic powder, salt, and black pepper until smooth.
Slice the cucumber into 1/4-inch thick rounds.
Spread or pipe a small amount of the herbed cream cheese onto each cucumber round.
Garnish with pomegranate seeds and chopped parsley.
Arrange on a serving platter and refrigerate for 10 minutes before serving.
Notes
For a lighter version, use reduced-fat cream cheese.
