  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup almonds, finely ground
  • 1/2 cup breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg, beaten
  • 1/4 cup flour
  • 1/2 cup cranberry sauce
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp water

Instructions

  1. Preheat oven to 375°F.
  2. Mix ground almonds, breadcrumbs, salt, and pepper in a bowl.
  3. Coat chicken pieces in flour, dip in beaten egg, then roll in almond mixture.
  4. Place coated chicken on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes until golden and cooked through.
  6. While chicken bakes, combine cranberry sauce, honey, mustard, and water in a small saucepan. Heat over low until smooth.
