Description

A rich and creamy chocolate ganache valentine cheesecake that melts in your mouth. Perfect for special occasions with its velvety texture and indulgent flavor.


Ingredients

Scale
  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 500g cream cheese, softened
  • 150g caster sugar
  • 3 large eggs
  • 200ml double cream
  • 200g dark chocolate, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 160°C (140°C fan).
  2. Mix the crushed biscuits with melted butter and press into a lined cake tin. Chill for 10 minutes.
  3. Beat the cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the double cream, melted chocolate, and vanilla extract.
  6. Pour the mixture over the biscuit base and bake for 45-50 minutes until set but slightly wobbly in the center.
  7. Let it cool completely before refrigerating for at least 4 hours.
  8. Serve chilled with extra ganache if desired.
