- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 lime, juiced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Marinate chicken with olive oil, lime juice, chili powder, cumin, garlic powder, and salt for 15 minutes.
