A comforting and nutritious Chickpea Noodle Soup that’s easy to make and packed with flavor.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup whole wheat noodles
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add chickpeas, noodles, thyme, and parsley.
  6. Reduce heat and simmer for 10 minutes until noodles are tender.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • For a keto version, replace noodles with zucchini noodles.
  • For a low-calorie version, reduce the amount of olive oil.
