A delicious twist on classic chicken parmesan, stuffed into vibrant bell peppers for a flavorful low-carb meal.

- 4 large bell peppers, any color
- 1 lb ground chicken
- 1 cup marinara sauce
- 1/2 cup breadcrumbs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a bowl, mix ground chicken, breadcrumbs, 1/4 cup mozzarella, parmesan, garlic powder, oregano, salt, and pepper.
- Stuff each pepper with the chicken mixture.
- Place the stuffed peppers in a baking dish. Drizzle with olive oil.
- Bake for 25 minutes.
- Remove from oven, top with remaining mozzarella and marinara sauce.
- Bake for another 15 minutes until cheese is melted and bubbly.
- Serve hot.
Notes
- You can use ground turkey instead of chicken.
- For a spicier version, add red pepper flakes to the chicken mixture.
- Leftovers keep well in the fridge for up to 3 days.
