Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 2 cups water
  • 1 can diced tomatoes, undrained
  • 2 cups uncooked pasta
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro, chopped for garnish

Instructions

  1. Brown the ground beef with onion in a large skillet over medium heat.
  2. Drain excess fat, then stir in taco seasoning, water, and diced tomatoes.
  3. Add uncooked pasta, bring to a boil, then reduce heat and simmer for 10-12 minutes until pasta is tender.
  4. Remove from heat, stir in sour cream and half the cheese.
  5. Sprinkle remaining cheese on top, cover for 2 minutes to melt.
  6. Garnish with fresh cilantro and serve.
