- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp caraway seeds
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and cook until browned on all sides.
- Stir in onion, garlic, and bell pepper. Cook until softened.
- Add diced tomatoes, tomato paste, paprika, and caraway seeds. Stir well.
- Simmer for 45 minutes, stirring occasionally.
- Sprinkle cheese on top and let melt before serving.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Serve with crusty bread or over mashed potatoes.
