Ingredients

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix flour, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk oil, granulated sugar, brown sugar, eggs, and vanilla. Add dry ingredients and mix well. Fold in carrots.
  4. Pour batter into the pan. In a separate bowl, beat cream cheese, powdered sugar, and lemon juice until smooth.
  5. Drop spoonfuls of cream cheese mixture onto the batter. Swirl with a knife.
  6. Bake for 30-35 minutes or until a toothpick comes out clean. Cool before cutting.

  • For a keto version, use almond flour and sugar substitutes.
