- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup melted butter
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 large egg
- Preheat oven to 350°F and line an 8×8 baking pan with parchment paper.
- Mix flour, sugars, cinnamon, nutmeg, and salt in a bowl.
- Stir in melted butter until crumbly, then press half the mixture into the pan.
- Beat cream cheese, powdered sugar, vanilla, and egg until smooth.
- Spread cream cheese mixture over the crust, then top with grated carrots.
