A moist coffee cake with a sweet blueberry filling and a crumbly streusel topping.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 3 tbsp cold unsalted butter, cubed

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch square baking pan.
  2. In a bowl, mix 2 cups flour, granulated sugar, baking powder, and salt.
  3. Add softened butter, egg, vanilla, and milk. Stir until combined.
  4. Spread half the batter into the prepared pan. Top with blueberries.
  5. In another bowl, combine brown sugar, 1/4 cup flour, and cinnamon. Cut in cold butter until crumbly.
  6. Sprinkle streusel over the blueberries. Spread remaining batter on top.
  7. Bake for 35-40 minutes or until a toothpick comes out clean.
  8. Cool before serving.

Notes

  • Use frozen blueberries if fresh are unavailable.
  • Store leftovers in an airtight container for up to 3 days.
  • For extra flavor, add lemon zest to the batter.
