A hearty and flavorful black bean soup with a rich tomato broth. Perfect for a quick and nutritious meal.

Ingredients

  • 2 cups black beans, soaked overnight
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 slices turkey bacon, chopped (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and turkey bacon if using. Cook for 3 minutes.
  3. Stir in red bell pepper and cook for another 2 minutes.
  4. Add black beans, diced tomatoes, vegetable broth, cumin, and paprika.
  5. Bring to a boil, then reduce heat and simmer for 25 minutes.
  6. Season with salt and pepper.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a thicker soup, blend half of it before serving.
  • Soak beans overnight for best texture.
  • Store leftovers in the fridge for up to 3 days.
