- 2 cups black beans, soaked overnight
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can diced tomatoes (14 oz)
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 slices turkey bacon, chopped (optional)
- Fresh cilantro for garnish
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and turkey bacon if using. Cook for 3 minutes.
- Stir in red bell pepper and cook for another 2 minutes.
- Add black beans, diced tomatoes, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Season with salt and pepper.
- Serve hot, garnished with fresh cilantro.
