  • 2 cups black beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 carrot, diced
  • 1 stalk celery, chopped
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 slices turkey bacon, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, carrot, celery, and turkey bacon. Cook for 5 minutes.
  3. Stir in cumin, smoked paprika, and bay leaf. Cook for 1 minute.
  4. Add soaked black beans and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 45 minutes, or until beans are tender.
  6. Remove bay leaf and blend half the soup for a creamy texture.
  7. Season with salt and pepper. Serve hot.
