A hearty and spicy black bean soup with a kick of jalapeño. Perfect for a quick and healthy meal.

Ingredients

  • 2 cups black beans, soaked overnight
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 red bell pepper, diced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 strips turkey bacon, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, jalapeño, and red bell pepper. Sauté until soft.
  3. Add turkey bacon if using and cook for 2 minutes.
  4. Stir in black beans, vegetable broth, cumin, and smoked paprika.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Blend half the soup for a creamy texture or leave it chunky.
  7. Season with salt and pepper to taste.
  8. Serve hot with your favorite toppings.

Notes

  • Soak beans overnight for faster cooking.
  • Adjust jalapeño amount for more or less heat.
  • Store leftovers in the fridge for up to 3 days.
