- 2 cups black beans, soaked overnight
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 1 red bell pepper, diced
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 strips turkey bacon, chopped (optional)
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, jalapeño, and red bell pepper. Sauté until soft.
- Add turkey bacon if using and cook for 2 minutes.
- Stir in black beans, vegetable broth, cumin, and smoked paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Blend half the soup for a creamy texture or leave it chunky.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
