- 2 cups dried black beans, rinsed
- 4 cups vegetable broth
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp lime juice
- 1/4 cup fresh cilantro, chopped
- 1/2 cup turkey bacon, cooked and crumbled (optional)
- Soak the black beans overnight in water, then drain and rinse.
- In a large pot, heat olive oil over medium heat. Add onion, garlic, bell pepper, and jalapeño. Cook for 5 minutes until softened.
- Add cumin, smoked paprika, chili powder, oregano, cayenne, salt, and black pepper. Stir for 1 minute.
- Add drained beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
- Blend half the soup for a creamy texture or leave it chunky.
- Stir in lime juice and cilantro.
- Top with turkey bacon if desired before serving.
