  • 2 cups sliced mushrooms
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp flour
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Season beef tenderloin with salt and pepper.
  3. Sear the beef on all sides until browned, then set aside.
  4. In the same pan, melt butter and sauté onions and garlic.
  5. Add mushrooms and cook until softened.
  6. Sprinkle flour over the mixture and stir well.
  7. Slowly pour in beef broth while stirring to avoid lumps.
  8. Add thyme and simmer until gravy thickens.
  9. Return beef to the pan and cook to your desired doneness.
  10. Slice and serve with mushroom gravy.

Notes

  • For a keto version, omit flour and thicken with xanthan gum.
  • Use low-sodium broth for a low-salt option.
