A hearty bean soup made easily in a slow cooker, perfect for a comforting meal.

Ingredients

  • 1 cup dried beans (your choice)
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 strips turkey bacon, chopped (optional)

Instructions

  1. Rinse the dried beans and soak them overnight. Drain before using.
  2. Add all ingredients to the slow cooker.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove the bay leaf before serving.
  5. Adjust seasoning with salt and pepper if needed.
