  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Rinse the beans and soak them in water overnight.
  2. Drain the beans and set aside.
  3. Heat olive oil in a large pot over medium heat.
  4. Add chopped onion, garlic, carrot, and celery. Sauté for 5 minutes.
  5. Add the soaked beans, water, salt, pepper, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Remove the bay leaf before serving.
