A hearty bean soup with a rich garlic flavor, perfect for cold days.

Ingredients

  • 2 cups white beans, soaked overnight
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2 slices turkey bacon, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add turkey bacon and cook until crispy.
  3. Add onion, carrots, and celery. Sauté until soft.
  4. Stir in garlic and cook for 1 minute.
  5. Drain the soaked beans and add them to the pot.
  6. Pour in vegetable broth and add the bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1 hour.
  8. Season with salt and pepper before serving.
