Ingredients

  • 2 cups dried beans (any variety)
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tbsp butter
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Rinse the beans and soak them overnight in water.
  2. Drain the beans and set aside.
  3. In a large pot, heat olive oil over medium heat.
  4. Add onion, garlic, carrots, and celery. Cook until softened.
  5. Add the soaked beans, vegetable broth, salt, pepper, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 1.5 hours or until beans are tender.
  7. In a small pan, melt butter and sauté minced garlic until fragrant.
  8. Stir the garlic butter into the soup just before serving.
  9. Garnish with fresh parsley.

  • Soaking beans overnight reduces cooking time.
  • For a creamier texture, blend half the soup before adding the garlic butter.
