- 1 cup dried white beans, soaked overnight
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 strips turkey bacon, chopped (optional)
- Drain and rinse the soaked beans.
- In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened.
- Add turkey bacon (if using) and cook for another 2 minutes.
- Add beans, vegetable broth, thyme, and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until beans are tender.
- Season with salt and pepper. Remove bay leaf before serving.
Notes
- Soaking beans overnight reduces cooking time.
- For a thicker soup, blend half of it before serving.
- Store leftovers in the fridge for up to 3 days.
