Ingredients

  • 1 can black-eyed peas, drained
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • Dressing: 1/4 cup olive oil, 1/4 cup lime juice, 1/2 teaspoon salt, 1/4 teaspoon pepper

Instructions

  1. In a bowl, combine black beans, black-eyed peas, corn, bell pepper, onion, and cilantro.
  2. Gently fold in diced avocado.
  3. In another bowl, whisk olive oil, lime juice, salt, and pepper to make the dressing.
  4. Pour dressing over the mixture and toss gently.
  5. Chill for 30 minutes before serving.
