A delicious and easy-to-make Asparagus Puff Pastry Tart with Feta, perfect for a light lunch or appetizer.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 bunch asparagus, trimmed
  • 100g feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry on a baking sheet lined with parchment paper.
  3. Score a border around the edge of the pastry, about 1 cm from the edge.
  4. Brush the pastry with olive oil and sprinkle with crumbled feta.
  5. Arrange the asparagus spears on top of the feta.
  6. Brush the edges of the pastry with beaten egg.
  7. Bake for 20-25 minutes until the pastry is golden and the asparagus is tender.
  8. Season with salt and pepper before serving.

Notes

  • For a crispier crust, prick the center of the pastry with a fork before adding toppings.
  • You can add a drizzle of balsamic glaze after baking for extra flavor.
