Description

Ingredients

2 cups rolled oats

1 tsp. baking powder

1 tsp. cinnamon

1/2 tsp nutmeg

1/4 tsp. salt

1 3/4 cups almond milk

2 eggs

1/3 cup pure maple syrup

2 teaspoons pure vanilla extract

2 medium apples, diced small

1/2 cup chopped pecans


Instructions

1. Preheat oven to 375°F and grease an 8×8 casserole dish.

2. In a large bowl, mix oats, baking powder, cinnamon, nutmeg, and salt.

3. In a medium bowl, whisk almond milk, eggs, maple syrup, and vanilla.

4. Pour wet mixture into dry and stir until combined.

5. Fold in diced apples and pecans.

6. Transfer to baking dish and press down gently.

7. Top with extra apple chunks and pecans if desired.

8. Bake uncovered for 40–45 minutes until golden.

9. Cool for 5–10 minutes before serving.

10. Store leftovers in an airtight container in the fridge.

Notes

Use firm apples like Fuji or Honeycrisp for better texture.

Can be frozen in slices for up to 2 months.
