Crispy, golden zucchini fries coated in Parmesan cheese and breadcrumbs, cooked to perfection in an air fryer for a healthier snack or side dish.

  • 2 medium zucchinis, cut into fries
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and black pepper.
  3. Dip each zucchini fry into the beaten eggs, then coat with the breadcrumb mixture.
  4. Place the coated fries in the air fryer basket in a single layer, lightly spray with cooking spray.
  5. Cook for 8-10 minutes, flipping halfway, until golden and crispy.
  6. Serve immediately with your favorite dipping sauce.
