1 1/2 cups almond flour
1/4 cup melted coconut oil
1/4 cup maple syrup
1/2 teaspoon vanilla extract
1 1/2 cups chocolate chips, divided
In a large bowl, mix almond flour, melted coconut oil, maple syrup, and vanilla until well combined.
Fold in half of the chocolate chips.
Line a baking sheet with parchment paper. Spread the dough evenly using clean hands to shape it into a bark layer.
Place the tray in the freezer for 5–10 minutes until firm.
While chilling, melt the remaining chocolate chips in the microwave.
Pour the melted chocolate over the bark and smooth it out.
Return to the freezer for at least 1 hour, then slice or break into pieces before serving.
Store bark pieces in an airtight container in the freezer for up to 2 weeks.
Let sit at room temperature for 1–2 minutes before eating for a chewier bite.
