A quick and flavorful 20-minute black bean soup packed with protein and spices. Perfect for busy weeknights.

Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion until soft, about 3 minutes.
  3. Add garlic, cumin, chili powder, and smoked paprika. Cook for 1 minute.
  4. Pour in black beans and vegetable broth.
  5. Bring to a simmer and cook for 10 minutes.

  7. Season with salt and pepper.
